IQF alphonso mango dice/slices are produced from fresh, sorted, and ripened Alphonso mangoes cultivated naturally. Alphonso mangoes are widely cultivated in Karnataka. It is predominantly grown in the Konkan region of western India. The alphonso mango is a seasonal fruit available from April- June.

Frozen alphonso mango dice/slices manufacturing process
Frozen alphonso mango slices are derived from mature, ripe, and fresh alphonso mango fruits. The mangoes are procured and sorted based on colour, size, and maturity. The manufacturing process of IQF alphonso mango dice begins with washing. The washing removes the dust, sediments, and other impurities on the mango peel. The washed fruits are passed through the conveyor belt, and the skin is peeled manually. The fruits are cut into slices of a specific size (60 x 40 mm). The sliced mangoes are fed into the dicer. The dicer is adjusted as per the required output. (20x25mm). The diced mangoes are then passed through the blast freezer at -30 degrees Celsius to -40 degrees Celsius. The diced mangoes are subjected to quality inspection in the conveyor to remove foreign particles. The frozen alphonso mango dice are passed on to the vibrator equipped with 10mm mesh to remove the dice lesser or greater than 10mm. The vertical airflow technology is used to secure an even airflow distribution that produces uniform freeze. Eventually, the product is packed in 10kg food-grade LDPE bags in 5-ply corrugated cartons. The cartons are passed through the metal detector to eliminate foreign particles. The frozen alphonso mango dice are stored in the cold storage room where the temperature is maintained at -18 degrees celsius.
