Manufacturing process of IQF Sweet Corn
The manufacturing of Individually Quick Frozen (IQF) Sweet Corn involves a series of precise steps to ensure maximum freshness, hygiene, and nutritional retention. IQF technology helps in freezing each kernel separately, preventing clumping and preserving the natural taste, color, and texture of the sweet corn.
Raw Material Selection: Super Sweet corn(SH2)
The process begins with sourcing high-quality fresh sweet corn from approved farms. To ensure superior taste and texture, only fully ripened, tender, and naturally sweet corn is selected. (Selection Criteria: High sugar content (for natural sweetness), Uniform kernel size and color, Free from pests, diseases, and damage, Non-GMO and pesticide-free varieties preferred)
Cleaning & Pre-Washing:
Once the corn arrives at the processing facility, it undergoes thorough cleaning and pre-washing to remove dirt, husk remnants, and foreign particles.(Cleaning Process: 1. The corn is passed through water spray tunnels to remove surface impurities. 2. Mechanical cleaning ensures husks and silk threads are removed. 3. The cobs are manually inspected for any defects.)
Blanching:
Blanching is a crucial step to maintain the color, texture, and flavor of sweet corn while also inactivating enzymes that could cause spoilage, improve shelf life and reduce the microbial load in the product. The corn kernels (or whole cobs) are briefly boiled in hot water (85-95°C) or steamed for 3-5 minutes. Immediately after blanching, the corn is rapidly cooled to stop the cooking process through the chilling line.
Cutting & Kernel Separation:
Once cooled, the corn is cut into kernels or left as whole cobs, depending on the final product requirement. Specialized kernel-cutting machines carefully remove the kernels from the cob without damaging their structure. The cut kernels are passed through sieves to separate broken pieces, husk remnants, or underdeveloped kernels.
Sorting & Grading:
To ensure consistent quality, the sweet corn undergoes grading based on size, color, and texture. Workers visually inspect and remove any discolored or damaged kernels before freezing process.
IQF Freezing Process (Individually Quick Freezing):
This is the most important step, where the kernels are frozen individually to retain their natural freshness and prevent clumping. The sweet corn is passed through an IQF tunnel at temperatures of -35°C to -40°C. Cold air blasts quickly freeze each kernel individually within minutes, preventing ice crystal formation. The kernels maintain their original shape, texture, and moisture content.
