Papaya is a tropical fruit and is native to Central America and Mexico. Now, it is harvested throughout the tropical world and the warmest regions of subtropics. Papaya is mainly consumed for its sweet pulp, usually with an orange colour and a juicy flavour. India is the world leader in papaya production with an annual capacity of about 3 million tonnes. Papayas are predominantly cultivated in Andhra Pradesh, Tamilnadu, Maharashtra, and Karnataka.

Process
Aseptic red papaya puree concentrate is extracted from sound mature and selected varieties of papaya. The matured papayas are harvested and transported to our papaya pulp processing facility. The fruits are unloaded, sorted, and filled in clean crates. The fruits are ripened naturally in the ripening chamber to retain the natural flavour of the fruit. After the ripening process, the papayas are first washed with chlorinated water and then with hot water at 70 deg celsius. The fruits are sliced and sent to the destoner machinery to produce the papaya puree. The papaya pulp is then passed through a decanter for specks removal. To produce papaya puree concentrate, the product is passed through the evaporator to remove the water content from the papaya pulp. The product papaya concentrate is stored in aseptic bags in MS drums and stored in cold storage houses.
