IQF Coconut dice/chunks manufacturing process
- The free-flowing IQF coconut chunks are not sticky, avoiding large ice crystals. This is achieved by a freezing technique called Individual Quick Freezing.
- The process begins with breaking the coconut shell either manually or using machinery. The coconut is peeled off and cut into two halves.
- Then the coconut is subjected to chlorinated water by a conveyor to remove bacteria. The coconut is then washed with fresh water to remove dust and impurities.
- The washed coconut is subjected to a dicer machine to cut the coconut into different dice/chunks. The dice/chunks are then passed through the IQF freezer where the coconut dice/chunks are frozen at (-40°C) to produce IQF coconut chunks/dice.
- To produce shredded coconut it is passed through a grater instead of a dicer. The IQF dice/ chunks are stored in food-grade LDPE bags in 10kg carton boxes. The IQF coconut chunks should be stored at -18°C.
