Overview
Due to the expansion in the processing industry and the demand for ready-to-eat products, the production and requirement for garlic paste have been continuously increasing. The processed garlic paste retains the intense flavor and aroma of the fresh garlic. The taste and nutritional value of Indian garlic are much better compared to other countries. As a result, garlic paste manufacturers in India have an advantage in the Asian market. In India, Madhya Pradesh is the largest producer of garlic paste in India followed by Gujarat and Uttar Pradesh.

Garlic paste manufacturing process
The high quality of fresh garlic is acquired, so the garlic paste’s color, aroma, and taste remain unchanged. The garlic paste manufacturing process begins with garlic clove separation. The garlic bulbs are separated into garlic cloves by a garlic separation machine. Once the garlic bulbs are separated, the cloves are fed to the garlic peeler machine, which peels the papery skin on the garlic clove. It is carried out either by abrasion process or by passing compressed air. The skin-peeled garlic cloves are washed to remove the dirt adhering to the surface of the clove. The garlic gloves may be air dried to remove water droplets before passing them to the crusher. The washed and dried garlic cloves are crushed in the crushing machine where the cloves are crushed to produce garlic paste. The garlic paste is then passed to the pulping tank and the sterilizer to kill microorganisms. The Garlic Paste is packed in blue color HDPE carboys or MS drum with double LDPE poly liner. The final product is stored in ambient temperature warehouses.
