Ginger paste is manufactured by crushing ginger rhizomes to a fine paste. The ginger paste or puree is a semi-solid product and resembles white to yellow. Ginger originated in Southeast Asia and is most commonly used as a dietary supplement in India. India is the world’s largest ginger producer, followed by China and Nigeria.

The ginger paste manufacturing process
High-quality ginger rhizomes are procured and brought to the factory. The ginger rhizomes are sorted with utmost care so that the final product’s colour, taste and aroma remain fresh. The gingers are sorted based on the surface colour, shape, size, weight and maturity. The sorting process is done manually or mechanically. The gingers are washed either manually or by machinery to remove dust particles as the gingers are grown underground.
Peeling is an indispensable part of the ginger paste manufacturing process. The gingers are peeled to remove the inedible parts. The peeling process is carried out mechanically if the ginger paste is manufactured on a large scaly. Followed by peeling, secondary washing is done to remove the leftover peels. The gingers are passed through the crusher to produce ginger puree. The ginger puree is further subjected to an evaporator to make a Ginger paste. Eventually, the final product is sterilized and packed in HDPE carboys or MS drums.
Usage of ginger paste
Apart from ginger paste, Ginger paste in combination with garlic is widely used. Ginger-garlic paste manufacturers use ginger rhizomes and garlic cloves to produce a ginger-garlic paste.
