Overview
Amla or Indian Gooseberry or Phyllanthus Emblica comes from the deciduous tree of the family Phyllanthaceae. Amla is native to the Indian subcontinent. Amla puree or Indian gooseberry puree or Amla Paste is extracted from mature amla fruit. Amla puree manufacturing process
Amla puree / Amla paste is extracted from high quality, matured and selected amla fruits. The process involves sorting, washing, destoning, fine pulping, and sterilizing. The fruits are sorted and washed with fresh water and disinfectant to remove dust particles. The blanching process is carried out to stop enzyme actions which otherwise cause loss of flavour, texture and colour. Destoner separates the seed from the fruit. The fruit miller crushes the fruit to produce amla puree. The amla puree is stored in the pulp collection tank. The amla puree is preheated at 65-70 Deg. The sterilization process removes pathogens and microorganisms from the amla puree. For concentrate products, the amla puree is passed through the evaporator to produce amla paste / amla juice concentrate. The amla puree is finally passed through the magnetic strainer and metal detector to remove speck particles. The gooseberry puree is aseptically packed and stored in temperature controlled warehouses.
