What is Fruit Concentrate?

Fruit concentrate is a product derived from fruits by removing approximately 60-80% of the water content, resulting in a denser, more flavorful form of the original puree. Also called semi-finished products. Concentrates are widely used in industries like Food beverage, Food processing, Dairy, Confectionery, Nutraceutical, and Alcoholic Beverage sectors due to their long shelf life, powerful flavor, and adaptability.

Fruit concentrates typically contain 65% to 70% soluble solids, condensed into about one-fourth or one-fifth of the original puree volume. For example, 100 liters of fruit puree can be reduced to around 20 to 25 liters of concentrate. Fruit puree concentrates are the most effective way to minimize packaging and transportation costs without compromising flavor and quality.

Every truck is subjected to a technical inspection, samples are gathered for analysis, and the fruits are primarily examined for brix, acidity, pH value, fruit maturity, and colour standards.

Fruit Concentrate Extraction Process

We focused on how the fruit is pressed or pulped to extract. We use triple-effect falling film evaporators to preserve the product’s color and flavor. We have an aroma recovery unit in the evaporator to bring it back into the product, so we don’t lose any natural flavor from it.

Evaporation Process of Fruit Concentrate

The evaporation process removes water from the puree, creating a thicker, more concentrated product. Evaporator’s temperature and brix level is controlled to produce a precise product that satisfies customer requirements. To protect the product’s nutrients, exposer time is regulated in the evaporator.

Fruit Concentrate Sterilization methods

Fruit concentrates are sterilized by heating them to 100-110°C for a short period to kill bacteria and deactivate microbial. After heating, it’s quickly cooled to preserve taste, color, and nutrients, extending shelf life without compromising quality.
